Crust:

- 24 oz (3 packages) cream cheese, softened
- ¾ cup granulated sugar
- 2 large eggs
- 2 ripe bananas, mashed (yellow with brown spots)
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
Caramelized Banana Topping:
- 2 bananas, sliced
- ¼ cup unsalted butter
- ½ cup brown sugar
- 2 tablespoons dark rum (optional)
- ½ teaspoon ground cinnamon
Instructions
- Prepare the Crust:
- Preheat the oven to 350°F (175°C).
- Mix the graham cracker crumbs, brown sugar, and melted butter in a bowl until combined.
- Press the mixture evenly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then let cool.
- Make the Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese and sugar until smooth.
- Add the eggs one at a time, mixing after each addition.
- Stir in the mashed bananas, vanilla extract, and cinnamon.
- Pour the filling over the cooled crust and smooth the top.
- Bake the Cheesecake:
- Place the pan in a larger roasting pan and fill with hot water halfway up the sides to create a water bath.
- Bake for 55-65 minutes, or until the center is just set. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.
- Prepare the Topping:
- In a skillet, melt the butter over medium heat. Add the brown sugar and stir until dissolved.
- Stir in the rum (if using) and cinnamon, cooking for 1-2 minutes until the alcohol cooks off.
- Add the banana slices and cook for 1-2 minutes until caramelized.
- Assemble:
- Once the cheesecake has cooled completely, pour the caramelized bananas and sauce over the top. Chill for at least 2 hours before serving.
Notes
- For a non-alcoholic version, replace the rum with vanilla extract or omit it entirely.
- Cheesecake can be made a day in advance and stored in the fridge. Add the topping just before serving.
