Cheesecake Filling:

  • 24 oz (3 packages) cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 2 ripe bananas, mashed (yellow with brown spots)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon

Caramelized Banana Topping:

  • 2 bananas, sliced
  • ¼ cup unsalted butter
  • ½ cup brown sugar
  • 2 tablespoons dark rum (optional)
  • ½ teaspoon ground cinnamon

Instructions

  • Prepare the Crust:
    • Preheat the oven to 350°F (175°C).
    • Mix the graham cracker crumbs, brown sugar, and melted butter in a bowl until combined.
    • Press the mixture evenly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then let cool.
  • Make the Cheesecake Filling:
    • In a large mixing bowl, beat the softened cream cheese and sugar until smooth.
    • Add the eggs one at a time, mixing after each addition.
    • Stir in the mashed bananas, vanilla extract, and cinnamon.
    • Pour the filling over the cooled crust and smooth the top.
  • Bake the Cheesecake:
    • Place the pan in a larger roasting pan and fill with hot water halfway up the sides to create a water bath.
    • Bake for 55-65 minutes, or until the center is just set. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.
  • Prepare the Topping:
    • In a skillet, melt the butter over medium heat. Add the brown sugar and stir until dissolved.
    • Stir in the rum (if using) and cinnamon, cooking for 1-2 minutes until the alcohol cooks off.
    • Add the banana slices and cook for 1-2 minutes until caramelized.
  • Assemble:
    • Once the cheesecake has cooled completely, pour the caramelized bananas and sauce over the top. Chill for at least 2 hours before serving.

Notes

  • For a non-alcoholic version, replace the rum with vanilla extract or omit it entirely.
  • Cheesecake can be made a day in advance and stored in the fridge. Add the topping just before serving.
