Ingredients

Scale
  • 1 box of lemon cake mix
  • 1/3 cup of melted butter
  • 2 large eggs
  • 1 can (14 ounces) of sweetened condensed milk
  • 1/2 cup of freshly squeezed lemon juice
  • Optional: zest of one lemon
  • Powdered sugar for dusting

Instructions

  • Prepare the Crust:

    • Preheat your oven to 350°F (175°C).
    • In a medium bowl, combine the lemon cake mix, melted butter, and one egg. Mix until a soft dough forms.

  • Make the Lemon Filling:

    • In another bowl, whisk together the sweetened condensed milk, remaining egg, freshly squeezed lemon juice, and lemon zest until smooth.
  • Assemble and Bake:

    • Pour the lemon filling over the prepared crust, spreading it evenly.
    • Bake in the preheated oven for 20-25 minutes, or until the edges are set and the center is slightly jiggly.
  • Cool and Serve:

    • Allow the bars to cool completely in the pan.
    • Once cooled, dust the top with powdered sugar.
    • Cut into squares and serve.
